Sauté onion until tender and translucent. Add the chopped carrots and stir until the carrots are well coated. Tip in the lentils, the vegetable stock and coconut milk and give everything a good stir. Add the vegetables and cook for a few minutes whilst stirring to coat in the spices.

- Combine all the spices in a bowl and stir lightly. Heat olive oil and butter in pan, sauté ketchup, add spices, and mix until fragrant.
