Fry until golden and crispy, then drain on kitchen paper. Halve and peel the avocado, cut into small chunks and toss through the remaining lime juice. Serve the soup in bowls topped with the crispy tortillas, coriander leaves, sliced chilli, avocado and feta. Garnish with shredded Monterey Jack cheese and the tortilla strips.

  1. In a large pot add chicken, broth, jalapeño and 8 cups of water to boil over med-high heat. Reduce heat to med; simmer until chicken is cooked through, about 15 min. Transfer chicken to a plate; let cool.
