A Tuscan soup is basically an Italian-style soup that contains beans, kale and vegetables. The famous Zuppa Toscana (translated as Tuscan soup) contains Sausage and or bacon. This version is my chicken version. There are lots of different Italian soups - tomato and bread based ones (Pappa al pomodoro), ones that contain vegetables and bread (Ribollita) and pasta soups.

Instructions to make Tuscan Chicken Soup:
  1. You can use anything to make the stock as in the carcass and a few other flavours. Put everything in the pan with 2 1/2 litres water and bring to the boil. Once boiling turn down to moderate, skim foam off, cover and leave to simmer for an hour.
  2. Cut the thigh meat and 1 1/2 chicken breast into bite-sized pieces
  3. (I decided to roast rest of legs and wings in the oven to make a Cesar salad tonight or tomorrow and to freeze the other 1/2 breast for future use)
  4. Brown the chicken in a little olive oil and salt
  5. Add the finely chopped onion and garlic, stir and cover for 10 minutes over a low heat
  6. Drain the stock and pour half of it (1 litre) into the chicken pan.
  7. Bring to a boil, stir in the carrots, beans, tomatoes and herbs. Reduce the heat to medium, cover and let this simmer for 20 minutes.
  8. Take the lid off, add the pasta and cook according to instructions
  9. When the pasta is done turn off the heat
  10. Serve in bowls
  11. Add Parmesan cheese and enjoy!!!!!

This version is my chicken version. There are lots of different Italian soups - tomato and bread based ones (Pappa al pomodoro), ones that contain vegetables and bread (Ribollita) and pasta soups. This Tuscan soup has a tomato-based broth with just a hint of creaminess without being a full-fledged cream soup. It is thick with Italian vegetables and teeny tiny pasta but still brothy enough to be a soup but not a stew. It might possibly be the most perfect chicken veggie soup I have ever had.
