Transfer to a blender in small batches and blend until smooth. Chop your carrots and potato and add to the pot (I like to sweat the carrots a while before adding broth). Add broth and bring to gentle boil. Drain, reserving liquid and setting vegetables aside.

  1. Peel the carrots and potatoes and half them/cut into large chunks.
  2. In a saucepan, put the broth. Add the potato and carrot chunks. Allow to cook for a while.
  3. Add the spinach, chilli, garlic and ginger paste. Season with salt and pepper. Cover and allow to cook till potato and carrots are tender. Set aside.
  4. You can remove the chilli or leave it in the stew.
  5. There's two ways to have this soup: as is(deliciously chunky) or blended. In this case, I went with the latter.
  6. When it's slightly cooled, blend it and serve. Enjoy๐Ÿ˜Š
