  13. Get 2 cloves garlic (minced)
  14. Take 1 Teaspoon Ginger (minced)
  15. Take 1 Teaspoon Miso paste
  16. Make ready 1 Teaspoon Olive oil

Instructions In a pot add oil then sauté garlic, ginger and white parts of spring onions. Pour in stock, carrots and celery and bring to the boil. Bring the stock to a simmer in a medium saucepan. Add the chilli and garlic paste, then bring back to the boil.

Steps to make Prawn and vegetable soup:
  1. In a large saucepan over medium heat, add oil & cook diced onion, until tender, add ginger, garlic and miso. Add water & stock.
  2. Chop all other vegetables to desired size, add to soup mix (reserve 2 Tablespoons of spring onion for a garnish at the end) add fish sauce & season to taste. Bring to the boil, reduce heat & simmer for 15 minutes, or until vegetables are soft. Add noodles to the soup & cook for a further 5-8 minutes, until cooked.
  3. Chop parsley, add to the soup. Serve in bowls. Garnish with chopped spring onion.

Bring the stock to a simmer in a medium saucepan. Add the chilli and garlic paste, then bring back to the boil. Blend the ginger, chilli, lemongrass, garlic and coriander in a food processor until quite finely chopped, adding a little vegetable oil if the paste is too dry. Add the paste to a large shallow. Meanwhile, place the stock in a saucepan and bring to the boil.
