Khow suey (from Burmese: ခေါက်ဆွဲ), is a noodle soup made of egg noodles and curried beef or chicken with coconut milk, served with a variety of contrasting condiments.

The ingredients needed to make Khowse/khow suey:
  1. Prepare 1 onion
  2. Get 3 garlic cloves
  3. Take 1 large piece of ginger
  4. Prepare 3 green chillies/dried red chillies
  5. Make ready 1 tin tomatoes
  6. Make ready 1 baby chicken/2 chicken breasts/or any leftover cooked chicken
  7. Prepare 1 tin coconut milk
  8. Get 2-3 cups water/stock
  9. Make ready 1 TSP each: tumeric, cumin powder, coriander powder
  10. Make ready 1 stick cinnamon
  11. Take 2 green cardamom pods
  12. Make ready to taste Chilli powder
  13. Make ready to taste Salt
  14. Prepare Toppings: mentioned below

Whisk/blend to completely mash the lentils. Khow suey dish obviously involves too much effort, right from preparing the noodles and the curry to the garnishes, it is completely, absolutely worth it. It is delicately spiced coconut milk sauce. Add the ginger- garlic pastes and fry till the raw smell goes.

Instructions to make Khowse/khow suey:
  1. Fry onion, garlic, ginger, green chillies till browned.
  2. Add to liquidiser with 1 tin tomatoes (or use stick blender). Blend till smooth.
  3. Add back to large pot, along with all remaining ingredients. Allow to simmer for 30 minutes, till chicken is tender. (Adjust water/salt according to how many people you hope to serve.. You canb stretch the soup by adding more stock/water by 1-2 more cups) if you wish, you can de-bone the chicken once cooked
  4. Serve with freshly cooked egg noodles.
  5. Toppings: shredded lettuce, thinly sliced green chillies, crispy fried onion (homemade or packet), crispy fried garlic slivers (homemade or packet), boiled egg, sorting onion, fish sauce, soy sauce, lemon wedges, fresh coriander.
  6. Note: when I make it for myself and husband, the bare minimum toppings of choice are boiled eggs, lettuce, spring onion and lemon wedges…

It is delicately spiced coconut milk sauce. Add the ginger- garlic pastes and fry till the raw smell goes. Add the turmeric and chilli powder along with chicken and saute till the chicken is cooked. Heat the wok, add oil and chopped onions and saute for a minute or two. When onion becomes pink add boneless chicken cubes and fry it well until it changes the color to white.
