Sauerkraut is one of my favorite fermented foods. The flavor is fairly neutral, so it goes with a lot of meals. My kids love it because it isn't spicy like other ferments. It's a great, easy way to get some good probiotics into your day!

- The sauerkraut is washed in cold water, then drained & squeezed the excess water. Put to boil in 2.5 liters of water.
- Once the cabbage is cooked enough, add the carrots, and the washed, drained tinned beans along the way the plant-based meatballs.
- Next comes the roux. Fry the flour in a little oil, pull off from the heat, add the red pepper powder, then mix with the sour cream until lump-free & smooth.
- As soon the carrots cooked as well, with the juice of soup delute the roux sauce pouring & simmering all together for a bit.

In large mixing bowl, mix cabbage thoroughly with salt, juniper berries, and caraway seeds, using hands or tongs. If using your hands, make sure that they are very clean prior to mixing.
