- Prepare 1 kg ,water (3 glass)
- Prepare 1-1/2 tbsp , salt (or as taste)
- Get 1/2 tesp , black pepper
- Take 1 tbsp , chilli flakes
- Get 1/4 tesp , all spices
- Prepare 1/2 tesp , cumin
- Get 1 tbsp , turmeric powder
- Prepare 1/4 cup , oil
- Make ready 1 ,onion (small)
- Get 2 ,tomatoes (paste)
- Prepare 4-5 , green chilli (paste)
- Prepare 1 tesp , ginger paste
Bring stock to the boil in a large pot; add chicken legs, onion, carrot and bay leaf. Transfer chicken legs to a plate; remove skin and finely shred chicken meat. Pour stock through a large sieve to remove vegetables and herbs. Remove the chicken from the broth and strain the broth.
Instructions to make Desi chicken clear soup:
- Take a pot, add chicken pieces and water and cook on medium high heat until chicken tender and water remains half.
- Once chicken tender. Remove it from pot and shread.
- Take another pot, add oil and heat it up, then put onion and cook for few seconds then add shread chicken and fry for 2to4 minutes.
- Now add dry ingredients and cook for few seconds.
- Then add remaining chicken stock and cook on high heat for 5 minutes.
- Then sprinkle some chaat masala and fresh coriander and turn off the flame.
- Desi chicken clear soup is ready. Serve as a soup or with rice as a side dish. If serving as a soup, squeeze some lemon juice.
- For rice, take a pot, add oil and heat it up then add onion and cook until gets soft.
- Then add tomato paste, chili paste and ginger paste and cook for few seconds.
- Now add dry ingredients and cook on medium heat for few seconds then add water and cook on high heat until becomes boiling.
- Now add soaked rice and cover with lid and cook on medium high heat until water drained. Then cook for 2 minutes on low flame.
- Turmeric rice ready for serve.
Pour stock through a large sieve to remove vegetables and herbs. Remove the chicken from the broth and strain the broth. Take water in a sauce pan and add in carrot, onions, ginger, red chilli, salt, pepper and chicken in it. Remove the chicken and shred into small pieces and set aside for a moment. Drain the stock and discard the vegetables.
