  14. Get 2 pcs bay leave

Stir in the tomato puree and add the curry powder, garlic powder, ginger, dried herbs, and crushed bouillon cubes. Add the rice, mixed vegetables, and water. Bring to a boil, then reduce the heat to low and cover the pot with foil and a lid. Put the rice into a large bowl, cover with cold water and use your hands to wash the grains.

Steps to make Jollof rice:
  1. Parboil the rice with salt and curry. Wash and set aside.
  2. In a pot heat up oil,add in chopped, onion, ginger and garlic paste,chopped scotch bonnets and fry for about 5mins.
  3. Add in some water,chicken stock,seasoning, curry,thyme,black pepper,white pepper,bay leave cover it and bring to boil.
  4. Add in your parboiled rice,cook on medium heat until water starts to thicken a bit.
  5. When done add in the scallion, cover it to steam and enjoy with coleslaw,fried chicken or peppered chicken are any thing of your choice

Bring to a boil, then reduce the heat to low and cover the pot with foil and a lid. Put the rice into a large bowl, cover with cold water and use your hands to wash the grains. Tip the water out then repeat twice until the water runs clear. Spiced and stewed in a flavorful tomato broth, it is everything from "everyday" to celebration.
