  2. Make ready 2 litre Chicken broth (use good quality stock if not making own broth)
  3. Prepare 1 tspn Mirin
  4. Prepare Ginger (thumb size piece)

  6. Prepare Handful pea shoots
  7. Get 1 small red onion diced thin
  8. Make ready 1 red pepper thinly sliced
  9. Get 1 large carrot thinly sliced
  10. Get 1 spring onion thinly sliced
  11. Get Splash soy sauce
  12. Prepare 1 lime wedge for garnish
  13. Get Sprinkle of fresh coriander for garnish
  14. Take 1 large red chilli sliced thin
  15. Prepare 4 nests of noodles
  16. Prepare Pork
  17. Make ready 4 lean pork loins
  18. Take Barbecue sauce

Cover and marinate in the fridge overnight. Remove the pork from the marinade, brushing off the excess salt and sugar. Add a handful of spinach to each bowl, then pour over the simmering broth. Top with a few slices of pork, egg halves, beansprouts and spring onion.

Instructions to make Chilli pork ramen:
  1. Marinate your pork steaks in barbecue sauce for at least an hour. I use a Tupperware and leave them in the fridge sealed. Once marinated and ready, griddle the pork for a few minutes either side so you have nice lines on them. Leave aside for a few mins to rest.
  2. Meanwhile, prepare all your veg. I like to slice everything long and thin so they can be eaten easily with the noodles.
  3. Get your chicken broth bubbling and add your ginger and garlic. Cook your noodles in the broth and then add all your veggies except your pea shoots (save a few bits of red onion to sprinkle on top for garnish). Thinly slice your pork. Layer your broth and noodles into a bowl and add the pork on top. Add the pea shoots to the bowl next to the pork and red onion, chilli and coriander. Garnish with a lime wedge too. Add soy sauce if required. Enjoy!
